#CookWithBlu - Teriyaki Vegetables with the Radisson Blu Hotel, Madrid Prado

Simple and regional dishes that highlight the best of local produce! The best thing? They're easy to cook at home!


Ingredients (Serves 4)

1 Red pepper

1 Green pepper

1 Zucchini

1 Eggplant

1 Red Onion

Cherry tomatoes


60 grams of soy sauce

60 grams of white sauce

60 grams of water

1 teaspoon ground ginger rasa

2 heaping tablespoons brown sugar
1 tablespoon of honey
2 tablespoons apple cider vinegar
1 tablespoon corn starch

1 tablespoon balsamic vinegar


Cut vegetables into cubes and cherry tomatoes in half

Place on oven tray; salt and pepper and add a drizzle of olive oil

Roast 20 min. 180º C

Mix the teriyaki sauce by adding all ingredients into a food processor until thoroughly combined

Dish the vegetables with the chopped and sauteed garlic and add the teriyaki sauce.

Top with Parmesan flakes.
